Leftover Farro Salad
Sometimes things get desperate.
You know what I’m saying.
Sometimes you look in the cabinet and think, “Shit, I’ve got to eat this?”
Well, if you’ve got some leftover water, farro, beets (and beet greens, that’s the green stuff you see in the picture), butternut squash, and carrots, you can eat this!
Look, all of these things are pretty straight forward and pan fried.
Except for the farro, it’s boiled in water.
After you cook everything, you can put all this stuff together and put on some dressing - rather it’s oil and vinegar or Italian dressing is up to you.
Cost? It’s leftover, you don’t remember what it cost when you bought it.
Have a lot of carrots? Put in a lot of carrots.
Have a lot of beets? Put in a lot of beets.
If you have to buy it new, plan on about a $1 per serving.
But then, why would you do that?
